Brief Description
These little pancakes are great for the person who craves savoury. They freeze well so you can make them on Sunday and snack on them for the rest of the week. You can eat them plain or add smoked salmon or cream to the top.

Directions
In a bowl, beat the egg then add and stir in rest of the ingredients to form a batter. Heat a non stick pan on medium and lubricate with a little oil. Using a heaped tablespoon of mixture, add to the pan and cook for 2mins on each side or until the bubbles come through then you know to turn over. Cook on other side for a minute or two. Mixture makes around 10 mini pancakes. 3 = 1 serve for a snack.
