Brief Description

This is the perfect easy no fuss chocolate cake if you are short on time or don't like alot of mess. Make is all at once in a blender! You can make this batter into a cake, brownie or muffins/ cup cakes. The healthy custard filling is a real winner too! Highly recommend the extra effort doing it (takes 5minutes).

Directions

Pre heat oven to 180 degrees on fan bake.

Add to your blender the eggs, vanilla essence, followed by flour - I used the Edmonds self raising gluten free flour. You can use almond meal, coconut flour or standard self raising flour. 
baking powder, 1/3 cup cocoa powder, chia seeds, melted butter, melted dark chocolate ( I used Lint 75%), and Natvia (sugar free natural sweetener but you can use xylitol, honey or coconut sugar). 
Blend all together for 1 minute. 
Line a brownie tray or meatloaf dish with baking paper or cake tin with baking paper. Pour batter inside. 
Place in oven for 25mins or until comes out clean when knife inserted. 

Take out let cool. Slice in half. 

Caramel custard filling

Add 4Tb Edmonds custard powder to a microwaveable bowl. Add 1Tb cocoa powder and the 2Tb Natvia and mix. Add 1/4 cup almond or normal milk and mix well. I added a little extra vanilla essence too-1 capful. Then add rest of the milk and mix. Place in microwave for 2minutes but stir after 1 minute. Should be quite thick after the second minute with the stirring. If not put in for another 30 seconds. If too thick, add a little extra milk to texture you like. 
Let cool for a few minutes before spreading it over the bottom half of the brownie or cake. Place the other half on top. Sprinkle top with cocoa powder or icing sugar and serve.
