Ice cream

Brief Description

This is a cost effective 'raw' cake with no overally expensive ingredients. It is also less rich that most as there is no nuts or coconut oil which can also bump up the calorie intake and cost.

This is super nutritious though- you could eat this for breakfast if you wanted! High in antioxidants and potassium with the bananas and berries. You can swap the peanut butter for almond butter or other nut butter but a little fat does help it keep from becoming too hard once frozen.

This is mainly berries as berries have a lower sugar content in them than most fruits. If you wanted to go completely low carb, you can also take out the banana and add an extra cup of berries and use Natvia instead of honey.

How to:
(no pre heat the oven lol!!)
Blend the berries and banana together (I had to do it in two lots in my food processor, then once blended I could fit them all back in the one food processor).
Add the peanut butter, cinnamon and natvia/ sweetener and blend for 1 minute. It should look like ice cream consistency.
Finally an option- add 50g of dark pieces into food processor and blend for 10 seconds so that they don't get too mulched.
Pour into silicon cake tin (much easier to pop out later) or line a standard one with glad wrap or baking paper.
Freeze for 2 hours or more.
Flip out of mould, onto serving plate
Melt the rest of the chocolate and spread over cake, top with berries
Serve, or if you are putting it back into the freezer to serve at a later date, then when you take it out again, do give it around 15minutes to let it defrost a little otherwise cutting it is quite hard.

Enjoy guilt free
