Meringues

Brief Description

These are just super fun! They are melt in your mouth meringues but without all the sugar! Thanks to our friends at Natvia, we can make a sugar free healthy option. This is the base for it but you can also add cocoa powder to make chocolate meringues or add touch of cinnamon or once they are dried out you can dip the bottoms in melted chocolate for some dessert meringues. Otherwise I have been having 2 of these each night.

Directions

Pre heat oven to 180 degrees. Line a baking tray with 2 layers of baking paper as the bottoms of meringues go brown faster. Let eggs warm to room temperature if they have been in the fridge.

Separate the egg white from the egg yolks- remember the egg yolks can be used for making custard! :) 

Beat with an electric beat on high speed until the the mixture forms stiff white peaks and is glossy. Then beat in the Natvia or Avalanche Sugar Free drinking chocolate (the mint variety is quite nice too for a minty meringue for another 2mins on high. 

Spoon the mixture about a tablespoon full on the baking paper in rows. Or you may want to flatten the mixture out to form bases as after they are cooked you can place yoghurt and berries on top. 
Place in oven and turn down heat to 140 degrees. Bake for 1 hour then turn oven off and let cool. They should hard up. I made shot glasses of mousse and then placed one of these on top.
