Directions

Pre- heat oven to 180 degrees Celsius. Dice up the strawberries. Add the eggs and oil in a bowl and beat well. Then add protein powder and baking powder and whip until a batter forms (1 min). Fold in desiccated coconut and diced up strawberries. Oil/grease lightly the mini muffin tray so mixture doesn’t stick. Then with a teaspoon, fill each muffin hole to the top with mixture. Bake in oven for 20mins or untll just golden on top. Try avoid over cooking them, they are better undercooked than over cooked as they can go dry. 

This batter did 9 mini muffins. Each muffin would be around 40 calories so 2 for a snack would be fine.
