Baked flan

Brief Description

This is a great Sunday breakfast to share around the family or to have yourself for the next 2 days. Even make it to put in lunch boxes or make for a fun healthy afternoon tea ( I take if to work all the time but I have it for breakfast a lot- certainly gets me out of bed in the morning! 


It has your fruit, yoghurt, protein, no sugar and gluten free.

Greek yoghurt

baking powder

cinnamon

Natvia/honey

Directions

Pre heat oven to 180 degrees Celsius. Line a meat loaf try with baking paper (just makes it easy to remove).

Slice strawberries length ways. Beat the eggs well ( I use an electric beater) with the baking powder, Natvia (or other sweetener) and cinnamon. Gently beat or stir in the yoghurt and finely desiccated coconut. Pour mixture into meat loaf dish and place the sliced strawberries on top. If you want to make it go a little more golden, you can sprinkle coconut sugar over the top. 
Bake for 25mins until golden or cooked through- check by pushing down the middle. Leave to cool before slicing as it is quite soft.
