Apple Loaf

Brief Description

This is a sure way to win anyone's heart whether its your family or for a social gathering. This cake is super moist, tastes delicious and can be served hot or cold (goes great in the lunch boxes!) It is also low allergenic other than made with eggs as it's gluten free, sugar free, dairy and nut free and with its simple ingredients, very easy to make! (You can use dairy alternatives too). 

Many parents have asked what we can they use as a gluten free flour that isn't expensive as almond meal or that their kids may have nut allergies. Coconut flour can be hard to use with baking as it doesn't bind well and soaks up a lot of moisture. An excellent alternative that I have been playing with is Ottos Cassava flour. From cakes to fritters to pancakes, it has been great!

Directions

Pre heat the oven to 200 degrees. 

Grate the apples (you can leave skin on). Melt coconut oil (or organic butter)

Using a whisk, beat the eggs together then add the almond milk, melted butter/ oil, spices, lemon rind and juice and mix well. 

Sift in the flour and baking powder to form a batter. 

Fold in the grated apple. 

Grease a loaf tin well and pour batter in. 

Bake in oven for 45minutes or until golden brown on top and knife comes out clean when inserted. 

Let cool before removing carefully from loaf tin.
