Directions
What you will need: -1 x standard sized loaf tin
-Baking paper (unless you have a silicon loaf tin where it pops out but baking paper just makes life easier when you don’t have to clean the tin after use).
How to:
Pre heat oven to 180 degrees celcius. Line loaf tin with baking paper. Thinly slice the zucchini lengthways and slice up the green olives. Layer a third of the zucchini slices along the bottom of tin, slightly overlapping so you can’t see the bottom, then a layer of tomato slices followed by 1/4 cup Edam cheese and sprinkle of the olives. Repeat with the zucchini, tomato slices, cheese and olives. Then again for the 3rd layer. In a separate bowl, beat all the eggs together with a whisk or electric beater and add few good cracks of pepper and salt. Pour the egg mixture around the loaf tray until all gaps are filled and the egg is right to the top of the layers. Place in oven and bake for 30-40mins. Insert knife in centre to check, if it comes out clean then its done. Serve with side salad.
