Directions

Method:

1. Preheat oven to 180 deg C (350deg F).

2. In a large bowl add the buckwheat, coconut, seeds and almonds and mix together.

3. Blend the banana, peanut butter, Natvia or rice syrup and cinnamon together in a blender or food processor until runny and smooth. Fold the wet ingredients into the dry ingredients and stir well.

4. Line a baking try or shallow dish with baking paper and spread the mixture around evenly and thinly (no higher than 1 cm). Turn the oven down to 150 deg C (300deg F) and place in the oven for 20 minutes, until golden brown. Remove from oven and let cool so they can become crunchy.

5. Store in an airtight container. Serve 1/3 cup with yoghurt or milk, or top any dessert with it.
