Brief Description

Serve this with a blended raspberry sauce and you have breakfast and dessert all in one go. 

This is great when you think you have nothing in the house but you can still make a fun dessert or breakfast for yourself, family, flatmates or friends.

Directions

In a food processor or blender:
Add all the ingredients and blitz for 10 seconds. Heat a non stick pan with a little oil on medium heat. Pour 3 Tb of mixture for each pancakes (makes about 4 palm sized pancakes). Let bubble and thicken, then flip over to cook on the other side. 
Cook on the other side for around 1minute. 
Blend in a food processor 1/2 cup defrosted mixed berries and tsp cocoa powder for a antioxidant and vitamin C jam sauce.
