Brief Description

These muffins can be quite easily done as a dessert souffle. When you slightly undercook them they ooze there inner chocolate sauce. If you cook them for a little longer 5-10mins they become muffins.

Directions

Pre heat your oven to 200 degrees. If making muffins, use a silicone muffin try or muffin holders (much easier to pop out when cooked). If making into souffles, you can lightly grease small ramekins. 
  • In a blender add all the ingredients and whizz for 20 seconds. 
  • Pour mixture into muffin tray or ramekins until 3/4 way up. 
  • For gooey souffles cook for 20mins, for muffins cook for 30mins (knife will be clean when inserted then you know its cooked right through). 
  • Serve as hot dessert with chocolate berry sauce. 
Choc berry sauce:

Blitz 1/2 cup defrosted mixed berries with 1Tb cocoa powder until a paste. Pour over ramekins to serve.
