Custard

Brief Description

This is the real version of custard and in fact it is so quick and easy, I can't believe I used to buy it! Custard is actually super nutritious aswell. Egg yolks contain a huge variety of vitamins and nutrients and having this as a breakfast, or on top of porridge would actually be very beneficial. You can always swap the coconut sugar for honey or for a sugar free option would be Natvia. You can also swap the cows milk to almond milk or coconut milk for a dairy free option.

Directions

  • Using a sharp knife, split vanilla bean in half lengthways and scrape out seeds (or just use real vanilla essence. Place milk in a pot on medium heat and add bean and seeds to milk mixture. Cook, stirring constantly, for 5 minutes or until hot with steam rising and small bubbles around the edge of pot. (do not allow to boil completely). Remove saucepan from heat. 
  • Beat egg yolks with sugar (or Natvia) and cornflour until smooth. Whisk in hot milk (it is important that you keep whisking the while pouring the milk in so that the eggs don't scramble/ cook).
  • Transfer to a clean saucepan/pot. Cook over medium heat, stirring constantly, until sauce comes to a simmer. 
  • Remove from heat and stir in cinnamon. 
  • Place in glasses or ramekins and dust with cinnamon.
