These mini frittatas are an easy suggestion to make for a function or for school/ work lunches and work well in the colder months when you can heat them up but are just as nice cold. You can also keep getting creative with what you put in there for a different taste each time.

  • Preheat oven to 200 degrees.
  • Spray two mini non-stick muffin tins (each with 24 cups) with nonstick spray. Alternatively you can use a standard muffin tray to make large muffins
  • Fill prepared cups almost to the tops with egg mixture.
  • Bake until eggs puff and are just set in center, about 8-10 minutes.
  • Using a rubber spatula, loosen frittatas from the cups and slide onto a platter.
  • Serve immediately or at room temperature. Store in a tupperware container for later (will last up to 4 days in the fridge) or freezer them after that.
