Brief Description

These are quick and easy soft chewable cookies for any lunch box. Gluten and Dairy Free. 

You can swap the honey for real maple syrup or rice malt syrup, alternatively for a zero sugar option you can use Natvia which is commercially available stevia- based sweetener.

Directions

  • In a bowl, beat the eggs along with vanilla essence and lemon juice, add the sweetener and lemon zest, baking powder and soda and mix well- the mixture is likely to froth which is fine- makes for light and bouncy cookies. 

  • Then add in coconut and coconut flour and stir with a spoon for 2 mins as the coconut flour will bind everything together and thicken the mixture. The mixture should then be thick enough to use a tablespoon of mixture and roll into little balls. Makes 9-10 balls.

  • Place these on a baking tray with baking paper and bake for 10-15mins in a preheated oven on 180 degrees. Until slightly golden on top but check the bottoms as these normally go golden first.
