Directions

  • Pre heat oven to 180 degrees Celsius. 
  • Place fish fillets in a shallow baking dish and pour lemon juice, parsley and olive oil all over, marinate for 15mins. 
  • Dice vegetables into thick chunks and put in a mixing bowl. Add enough olive oil to cover, crushed garlic, salt n pepper and mix then add to the fish baking dish around the sides.
  •  Put some tinfoil over the top of the baking dish to keep the moisture in.
  • Put into baking tray and bake in oven for 25mins or until veges just softened and fish is cooked straight through.  .
