Brief Description

If you are diabetic or trying to keep your blood sugar levels low then swapping the standard potato top to cauliflower mash is a healthy option. This is lovely warming and filling meal.

Directions

How to:

  • Pre heat oven to 180 degrees Celsius. In a large frying pan on medium heat, add oil, onion and garlic and sautee until softened. 
  • Add mince and fry until cooked through, approx 12mins. Grate the carrot and sliced up mushrooms along with the curry powder, salt and pepper and chilli paste. 
  • Once cooked right through, turn heat to low and add tomato paste and tinned tomatoes. Let simmer for 10mins. 
  • Steam cauliflower in steamer until soft, then transfer to a bowl and mash with potato masher or put through the food processor. Add little salt n pepper to taste.
  • Transfer mince to a ceramic oven proof dish and then then pour the cauliflower mash on top of mince. Sprinkle over Edam or Parmesan cheese on top and bake for 10mins until cheese melted and top golden. Serve with basic side salad.
