Directions

How to:

-Turn oven to 200 degrees Celsius.

-Dice up the onion, olives, parsley and sundried tomatoes, and grate the zucchini and carrot and then add all ingredients into a large bowl including the mince and mix really well, either with a wooden spoon or with your hands.

-Line a loaf tin with baking paper and place mixture into it. Then sprinkle over remaining teaspoon of mixed dried herbs.

-Place in oven and bake for 40mins. Check meatloaf is cooked through by inserting a knife and seeing if juices run clear and the knife inserted comes out clean. The top of loaf should also be brown and firm to touch.

To serve:

Serve with a green salad or steamed vegetables or cauliflower mash. 

Cauliflower Mash: Steam half a head of cauliflower florets until soft. Add to a food processor and pulse until soft. Add Tb of butter or olive oil and few good cracks of salt and pepper. Optional extras is grated cheese, chives/ parsley.
