Tacos

Brief Description

These are a great way to serve your food. You can stuff them with a range of different ingredients. One of my favourites is lean mince. You can certainly add more vegetables to the mince aswell to increase your nutrient and fibre content. This is a great low carbohydrate alternative to pasta or tacos.

Your can leave the capsicums whole too instead of slicing in half

Directions

  • Pre heat oven to fan bake on 180 degrees. 
  • Slice capsicums in half (or you can keep whole and just remove the tops) and scoop out the seeds and white parts. 
  • Brush lightly with olive or other oil and place on a baking tray or dish and roast for 15-20mins (or until softened). 
  • While capsicums in oven, on medium heat in a large pan, fry the garlic, onion, lean beef until cooked through. 
  • Mix in the sliced mushrooms, carrot and zucchini and panfry until softened. 
  • Turn the heat down to simmer and add finely diced spinach, tomato paste and tinned tomatoes, stir through and then simmer for 5mins. Add salt and pepper to taste or other herbs you may want to add including oregano, basil, chilli flakes or chilli paste (look out for hidden sugars). 
  • Take capsicums out of oven, give each person 2x halves or a whole and stuff with  the mince mixture then sprinkle of the cheese (it should melt from heat of mince but if not you can always put it back into the oven until the cheese melts on top).
