Brief Description

IF you want something a little different to eggs, then mashing up avocado with some super veges is a great way to start the day. Having the good fats mean this super breakfast will keep you full and satisfied.

Directions

  • Pre heat oven to gill on 180 degrees. Line a baking tray and put your washed, peeled and dried Portobello mushrooms on it. Brush tops with a little olive oil or other oil. 
  • Place in oven and grill for 10 mins until just softened. 
  • While mushrooms are in the oven, add to a mixing bowl the finely diced spinach, pesto, avocado, salt n pepper and with your hand mix really well so that the avocado is creamy and spreads all over mixture.

Once mushrooms are done (try avoid over grilling as they become very soft), then place half the mixture on one mushroom and half on the other mushroom. Sprinkle the Parmesan cheese on top and place back in the oven to that it melts over the spinach. 

 Alternatively you can pop a poached egg on top.
