Brief Description

This a nice quick alternative to a chicken salad if you don't want to cook. 


You can get abit creative if you have more veges that you want to add in or you can take out what you don't like.

Directions

  • Open the tin of tuna and drain away brine or excess water. Add to a bowl. 
  • Add finely diced onion to the tuna along with diced olives and finely grated Parmesan cheese. Mix well together with a few good crackers of pepper. 
  • Place your lettuce on a plate with diced cucumber, diced sundried tomato and capsicum. 
  • Add the chickpeas and diced up parsley then place the tuna mixture in dollops over the salad. 
  • Drizzle over balsamic vinegar
