Directions

  • Add to your plate the mesculin leaves (or you can swap to baby spinach or rocket). 
  • Slice your peach/ nectarine and slice up the halloumi cheese into strip. Grill both on medium heat on a hot skillet/ grill or BBQ plate for a few minutes each side until halloumi browns. Take off heat and let cool. 
  • Thinly slice up capsicum and red onion and add to the salad bowl
  • Using a grater, peel your carrot into strips over the salad
  • Add the halloumi cheese and peach to the salad
  • Sprinkle the cashew nuts over the top. 
  • Drizzle over some fresh lemon or lime juice 
  • Voila, ready to serve.
