Brief Description

This is delicious yet filling meatless salad but will adequate amounts of fibre and good fat, you won't be left hungry.

Directions

Pre heat oven to 180 degrees. Line a baking tray with baking paper. Wash and peel 2 beetroot, then dice into wedges, placing them in the baking tray. Brush with olive oil and add few good cracks of rock salt. Roast in oven for 25 minutes. If you like them juicier, you can cover with tin foil, this locks in moisture.
While in oven..
Slice the cherry tomatoes in half and add to a mixing bowl followed by spinach, feta, walnuts and toss through with balsamic vinegar or my favourite coconut aminos sauce (found in New World). Once beetroot cooked, gently toss through and you are ready to serve.
