Fish Cakes

Brief Description

This you can really be adventurous with what you want to put in here. Either you can keep it simple or add extra veges, herbs or spices. I just love this as you can really make these little cakes out of a very few ingredients, so perfect for a quick lunch or dinner.

crushed garlic

Directions

Drain and empty salmon into a bowl. With a fork mash well making sure any bones are crushed. Then add in mustard, garlic, salt n pepper and peanut butter or thick cream cheese such as Philadelphia Cream cheese and mix well. Beat egg and stir in mixture. Form mixture into balls and then flatten to make patties. Put patties on baking paper and on a dish and refrigerate for 30mins while ingredients set. Then pan fry with 1-2Tb oil and preferably with a non stick pan each side for 5mins and then carefully turn over with spatula. Serve in a burger bun, on a grilled Portobello mushrooms or by itself with a salad.   
This recipes makes 4 fish cakes. Serves 2 people.
