There are very easy to make and can be great to eat by themselves with a side salad or used as a base for putting toppings on like smoked salmon, ham or avocado.

Directions

Grate kumara and zucchini using a grater. Squeeze excess moisture from grated kumara and zucchini. In a large bowl beat the eggs, finely diced onion, parmesan cheese, parsley and salt n pepper and mix well. Then stir in grated kumara and zucchini. Add 1Tb butter or oil to pan to avoid fritters sticking to the bottom and dollop 2x heaped tablespoons of mixture on the pan for each fritter Repeat process until you have a few fritters frying on your pan. Turn each over after 3 mins or until they are crisp and golden.

Will make 8 -10 fritters. 3-4 fritters = 1 serve
