Brief Description

This quick omelette is high in protein and nutrients. Eggs contain a wide variety of vitamins and minerals and of course so the tomatoes and spinach. Having the tomato and spinach with the eggs is important as they contain Vitamin c which helps the absorption of iron from the eggs.

Directions

Heat your pan to medium heat and add the oil to lubricate it. 

Beat your eggs together well and pour that in your pan to cover the surface area of your pan. While the egg cooks, dice up the tomato and spinach/kale and add to a bowl, if you have parsley or basil add it aswell. Then add in the basil pesto and feta and mix through the vegetables well. Once the egg is cooked through (will have bubbles in it), add the vegetables to one side of the circle and then fold over the other side ontop of the vege mix to heat them through. Warm for approx 2-2mins and then serve hot.
