Crepes

Brief Description

These gluten free crepes are super easy to make, if you are allergic to nuts you can swap the almond butter (or you can use smooth peanut butter) to spreadable cream cheese. 

If you don't have Natvia you can use coconut sugar or honey. 

You don't have to have the banana in the middle, you can swap to handful of berries or stewed apple/ any fruit.

Directions

For the middle: banana or blueberries and desiccated coconut or nuts

Add all ingredients in a bowl and beat well with a whisk until all blended. Heat your pan to medium heat and add oil, spreading around the pan. Once pan heated, add the mixture and tilt the pan to spread mixture evenly to resemble a crepe or large pancake. Wait 2-3 minutes until mixture starts to bubble. With your spatula gently wrap or start to fold the crepe in a roll. Alternatively wait till crepe is cooked through and then remove from pan to a plate. Place your berries or banana on top then then wrap up. Wrap in parchment paper and then you have a breakfast or snack on the go.
