Berry Bake

Brief Description

Another one of my favourites is a hot breakfast or pudding. This Peach and Berry Bake or Clafoutis is super easy and healthy. It is gluten free, dairy free and sugar free. Served with a dollop of thick Greek yoghurt and it can be enjoyed any time of the day.

Directions

Pre heat the oven to 180 degrees Celsius and grease a shallow pastry dish (I use coconut oil). Drain the peaches from the tin and place around the dish. Mix together the berries with the honey or sugar free sweetener like Natvia or even a sugar free jam and spread over the peaches.You can add a little more if you like things sweeter.
Beat the eggs together well, add the cinnamon, vanilla essence, baking powder and coconut flour. Pour the batter over the fruit and bake in the oven for 40 minutes or until golden on top. Leave to cool for 10-15mins before serving.
