Brief Description

Important to keep up your vegetable and fruit intake for your broad range of vitamins, minerals and antioxidants. For example making this Savoury Super Cake (aka large frittata done in a cake tin but if you call it a cake it sounds good), you can add so many wonderful veges in there like spinach or silverbeet- high in folate, needed for healthy cell replication or Vitamin K which is needed for healthy boneformation and structure. 
Broccoli is excellent for Vitamin C, fibre and had alot of research around its beneficial effect with (1) chronic inflammation (2) oxidative stress, and (3) inadequate detoxification. 
Carrots high in beta carotene which converts to Vitamin A is important for heart health, vision health and cancer protective properties. 
I could go on and on about the benefits of layering these foods either in a casserole or like my Savoury Super Cake can really help protect you from effects of stress and the office flu, or at least lessen the duration or affect.

Directions

Pre heat oven to 180 degrees. Line a brownie tray with baking paper or use a silicone cake holder as you don't have to grease it and it's very easy to get out after cooked. 
Layer the spinach on the bottom, followed by sliced tomatoes, mushrooms and few cracks of salt and pepper along with 1/4 cup cheese. Then layer the grated carrot followed by broccoli and olives on the top. You can certainly change up the veges depending on what you have at home. Beat the eggs together well and pour over the mixture so just covers the top. Sprinkle over rest of cheese and bake in oven for 40mins. Serve with side salad or tomato salsa
